We mostly play on PC but also have a PS3, XBOX360 and N64 available, I will concentrate on PC games though. Oh one other mod (well more of a gamemode really) is for Garrys mod. Game is ridiculously fun at LANs or when everyone has a voice chat program like mumble.
Best part of it is you can have anywhere from 3-20 players I would say and still have a blast. There's also the really neat program I forgot about that lets you play card and board games on your computer (Magic the Gathering, Pokemon, etc) plus you get acess to all the cards so you don't have to worry about everyone buying a ton of booster packs.

I strongly second Minecraft. It requires a little bit of work on the part of someone (the host) to set up some games and stuff but it's really fun if you can get some good minigames going. Survival Games is a really great riff on Hunger Games, you can download a couple of maps and they're great fun if you have enough people (say more than about 6). Spleef is also really good for small numbers or you can play tournaments and there are all manner of team based game maps you can download. The flexibility allows you to do all sorts of stuff, with or without mods.
